Pig Roast in San Diego

Let the fun begin!

Just got back from a wonderful and fun adventure to San Diego to visit relatives and friends. Joe’s annual Beckerley Pig Roast was main event. We spent 3 nights camping in the Cleveland National forest over Labor Day weekend. It was a successful and wonderful party with many people coming and going. The highlight was the roasting of the pig on Sunday.

Joe brings cinder blocks to the campsite and builds a bar-b-que. He lines the inside in Tin foil then heats the coals on the bottom. He places a huge grate on top and that is where the pig spends the day cooking.

This annual event is really about the people- friends and family all having a great weekend together. I would not miss it for the world!

The Hog has been marinating in Mojo juice Joe makes for 24 hours. This is a picture of the marinating about to begin.
